It’s become almost a requirement when I come to Colorado to stop at a pizza place called Beau Jo’s. I first had it in 2018 and think of it fondly when I’m on my drive here. It’s not the best pizza place in the area, that honor goes to Woody’s Wood Fired Pizza in Golden, but Beau Jo’s is a good alternative and much more accurately represents my idea of Colorado Style pizza.
What is Colorado style? I’m glad you asked. It’s when you have a fluffy crust and you put honey on it! It’s pizza and desert all in one. Beau Jo’s takes this idea to the extreme. They have probably a larger proportion of crust than toppings.
I have to admit, the honey in the restaurants is better than the Kraft packets they give you to go, but I’m not complaining. I was afraid when I ordered it that I wouldn’t get any honey, but they know what’s up. That would have been a tragedy.
My favorite Beau Jo’s location is in Idaho Springs. The atmosphere is nice, the building is really old, and the mountain town feel is strong. Plus, it’s right next to a great brewery, Tommy Knockers. I actually had Beau Jo’s and a Tommy Knockers beer the night before I hiked up 13,000 foot Notch Mountain. It was a great carb load. Anyway, if you enjoy crust that’s flaky on the outside and chewy on the inside, and like honey, then Beau Jo’s is worth a visit.
Today I stopped at a (new to me) location in Evergreen. I’ve never been to this town and it’s really quaint and perfectly mountain-esque. Beautiful weather means I got to sit in front of a lake, eating my pizza and breathing in the fresh air.
P.S. You get to order your pizza by the pound. Mine is just a lowly 1 pounder, but they go up to 5 pounds!
